In recent years, food safety has become an issue of global concern. This is because of the growing cross border trade that allows movement of food from one area to another which food should not cause any harm to its consumers. Food if not handled well along the entire value chain could lead to contamination which may have an adverse effect on the health of the consumer. Contamination to food may be physical, chemical or biological. All these can be eliminated or reduced to an acceptable limit if good manufacturing practices are employed during processing. This book looks at the production systems of dried cassava chips and flour in Uganda because this is a staple crop that is widely grown and consumed by the populations. Inadequate handling during processing could promote mould growth that are mycotoxigenic posing a great risk for cancer.
